This is originally from Campbell’s Kitchen Polynesian Pork chops but I changed it slightly for my family…
Polynesian Chicken
Ingredients:
4 boneless skinless chicken breasts
1 tsp. garlic powder
1 tbsp. vegetable oil
1 medium onion, chopped (I was out of onions, used a dash of onion powder)
1 can (10 3/4 oz.) Campbell’s® Condensed Golden Mushroom Soup
1/4 cup water
1 can (8 oz.) pineapple chunks
3 tbsp. soy sauce
1 tbsp. honey
2 cups cooked regular long-grain white rice (I used Thai rice)
Sliced green onion (didn’t have this either)
Directions:
SEASON breasts with garlic powder and onion powder.
HEAT oil in skillet. Cook chicken until browned. Add onion (if you had real onion).
ADD soup, water, pineapple with juice, soy and honey. Heat to a boil. Cook over low heat 15 min. or until done. Check the breasts because this will vary depending on the thickness.
SERVE with rice and sprinkle with green onions (if you have any green onions).
Ta da! It was fairly easy and I was able to make it even if I was missing a few items… pork chops, onions, green onions… I guess I really need to go grocery shopping before the weekends.

After the last spelling test, I remembered to work with Tater for the next one. I am proud to say he made 100%… here’s the proof:

I am amazed how much a six year old can do… just amazed. And if that wasn’t enough… Tot brought home some work as well…

How he was able to follow the teacher’s directions so well is amazing. He can’t even follow my simple instructions at home… like put your shoes by the door… sigh… It’s a mom thing. I just know it.

Some days I love my phone… other days I hate it. It doesn’t lock up on me quite as much as my old one. And I can put music on it. Which is awesome. I need to get a better grip on free music and how to get it on my phone. Particularly since I have a new external harddrive for my laptop. I have lots of room! Though pictures and digital scrapbooking take up a ton of room.
Back to the cellphone… I didn’t do a lot of research when looking for a new phone. I didn’t know about the option to have unlocked cell phones. I know about GPS because of my life in Europe. I can see why having a cell phone that allows any SIM makes life easier. I also think I would like to visit Europe again with my children. Having my cellphone with me would be nice as well. Sigh… back to learning more about technology… I need to make sure I have a cell phone that does everything I want. At least I have a few years to figure it out. GRIN
