Honey, Mustard and Chicken

Time for me to get on the ball and start posting recipes again! Besides, it gets me to looking at the Carnival of Recipes… Here is the information for this upcoming one: The Carnival will be hosted next week at http://chickenrecipes.wordpress.com/ and Chicken Recipes are preferred but not required. Send in your favorite recipe by 12 p.m. CST Saturday to be included. Well here is mine:

I got it from Campbell’s Recipe book and modified for my family…

Honey-Mustard Chicken

Ingredients:
Hot cooked rice
1 tbspn butter
4 skinless, boneless chicken breast halves
1 can (10 3/4 oz) Campbell’s Cream of Chicken Soup
1/4 cup Mayonnaise
2 tblspn honey
1 tblspn spicy brown mustard

Directions:
Cook Rice according to directions on box/bag. Meanwhile, in 10-inch skillet over medium-high heat, in hot butter, cook chicken 10 minutes, turning at half-way point or until browned on both sides. Remove; set aside.

In same skillet, combine soup, mayonnaise honey and mustard. Heat to boiling. Return chicken to skillet. Reduce heat to low. COVER; cook 5 minutes or until chicken is no longer pink, stirring occasionally.
