Peanut Butter cookies

It is getting time to those yummy recipes out here for the holidays. You can make so many things out of peanut butter cookies… ghosts, pumpkins, bats… just use cookie cutters and icing or sprinkles. This is the recipe I like best… I got it out of the ‘Cookie Cookbook’.

Ingredients:
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup butter, softened
1/4 cup shortening
1/2 cup peanut butter (I prefer smooth for this)
1 egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Directions:

Mix sugars, butter, shortening, peanut butter and egg. Stir in remaining ingredients. Cover and refrigerate at least 3 hours.

Heat oven to 375F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork dipped in flour. Bake until light brown, 9 to 10 minutes. Cool about 2 minutes; remove from cookie sheet.

These are very yummy!
