Ok, this is a little late… but maybe you can use it after Christmas! This recipe came from Campbell’s Chicken & Stuffing … with just a few changes made by me. I will put my changes in italics.
Ingredients:
1 tbsp. butter
4 skinless, boneless chicken breasts halves
Leftover stuffing
1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1/2 cup milk (and a little extra for the reheating of the stuffing as well as some water)
1/2 cup shredded Cheddar cheese
Directions:
Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 15 minutes or until it’s well browned on both sides and cooked through. Remove the chicken from the skillet.
Put the stuffing in the skillet with some milk and water to heat it up. Stir often until heated.
Return the chicken to the skillet. Stir the soup, cheese and milk in a small bowl. Pour the soup mixture over the chicken. Cover and cook over medium heat until the mixture is hot and the cheese is melted.

A couple of things happened yesterday that brought my dad back to the forefront of my mind. My sister, Tink, called and mentioned some really bizarre dreams which brought up my Dad and memories. Then Teresa put up a post that her Dad passed away yesterday. Go ahead and click the link on the previous line and leave a message. I’ll wait.
Back to my Dad. One of the things my sister and I miss about Dad is calling my parents house around Christmas time. When you called, Dad always answered the phone in a deep, gruff voice and would say “Bah Humbug”. Funny how little things like that are remembered.
It also made me realize that my kids will never get to hear that. Which made me sad, but then I couldn’t help but smile when I heard that voice in my head as I thought about it. I miss my dad but I can’t wait to see what weird things my kids remember about me and their dad!
