Mom

Chicken. Chicken. And more chicken. I’m tired of chicken. Ok, not really but I’m tired of coming up with recipes for chicken. What I like takes too long to cook. Or maybe I’m just too tired lately. Which ever it is… I’m done with chicken. Oh, and I had chicken for dinner last night and I’m fixing chicken for dinner tonight. UGH. Any suggestions?

    I have a chicken with brocolli and a cheese sauce.

    And a chicken with a corn flake coating that is yummy.

    Pork chops? I have an easy recipe…

    Fish? We have pan seared mahi about once a week, as well as tuna in some form…

    I know you’re sick of chicken, but I just made a wonderful chicken barley soup; very easy, very fast and full of healthy stuff! Found the recipe in Everyday Food.

    do you have a pressure cooker?

    Stewed Chix:
    chicken, can of tomatoes, chicken stock, onion into a pressure cooker (slow cooker, I guess). Add cut potatoes. Cook til tender. Serve over rice.

    My mom always made something she called chicken divan. There’s a recipe in the betty crocker cook book. I’ve modified it accordingly:
    cook chix in broth. When done, shred over a casserole dish with broccoli (I buy frozen). Add the broth. Maybe a can of cream of chix or cream of mushroom. Bake 350 however long until it looks right. Serve over egg noodles. Oh, I dust the casserole with panko and paprika.

    when boneless skinless br3a$ts are on sale, I like to make either homemade Chix nuggets or sweet n sour chix.

    Nuggets: make an egg wash, then dunk the cubed chix into the egg, then into a mixture of panko with some spices. Or buy a pre-made batter (think fish batter, no, really, it has more flavor). Or, use some cornmeal, garlic powder, salt, pepper, to make your own. Fry or bake.

    S&S Chix is similar, but then you also have to make fried rice (super easy) and a sauce (harder). I can provide pointers if you want.

    btw, my fried chicken uses the same breading as above. Hubby loves my friend chix.

    your kids are old enough… have you ever done fondu with them? Where you cook various meats in hot oil. It’s a time-consuming, messy meal, but fun. Kids like to cook their own food. And then you provide a variety of dipping sauces. RTY used to love doing fondu. When we do it, we have cubed chicken, pork, beef, and sometimes shrimp. It’s great for family time. But you have to watch them around the heat source and hot oil.
