I’m in a funk. I can’t find anything I want to cook anymore with chicken. I cook a variety but I’m tired of the ones I use. I get in a rut cooking the same stuff over and over because it is quick. I look up from working around the house and it is 5:30… I need dinner done by 6:30… I do Chicken Marsala, Chicken with Mushrooms, Chicken Parmesan, Chicken with Rice and Gravy, and the list goes on… sometimes I make a white cheese sauce to put on it. Yes, I do make stuff up as I go some days. But I’m running on empty. I want something tasty and different. Any suggestions?

Get some chicken (breasts, legs, thighs, whatever) Mix onion powder, garlic powder, lawry’s season salt and black pepper together. (amounts depend on taste and how much you need to make). Coat the chicken in yellow mustard. put a good sprinkling of the seasoning mix onto the chicken. wrap in tinfoil and let sit over night.
Get some woodchips from the grocery store. Make a tinfoil pouch where the edge is sealed good, place chips in pouch and pour some kind of beer into the pouch with the chips. If you did the seems right it won’t leak. Seal the opening by folding onto itself multiple times.
Pull chicken out of Fridge. Start grill. When it is hot, poke one small hold in foil packet, place hole side up on charcoal, or burner if you use propane. When steam starts to come out of the hole in the packet. Place chicken on Grill. Take fresh zuchinni and summer squash, slice into strips like steak fries, coat in olive oil and black pepper. cook on grill using foil on the rack. Occasionally spritzing with olive oil.
Viola!

My wife ran out of bread crumbs the other day, so she ground up some Honey Nut Cheerios and used them to fry the chicken with. Came out pretty tasty, too.
